With over 20 years of experience, Jon takes his inspiration from the flavours he discovered on his travels and from growing up in the Philippines. Priced at £66 per person, his nine-course tasting menu is a feast for adventurous food lovers. Expect dishes like shiitake mushroom pierogi with Aleppo chilli butter and slow-cooked short rib of beef börek with parsnip and wasabi hummus.

Taking inspiration from Disney’s Mulan and Baz Luhrmann’s Moulin Rouge, The Vaults presents a drag-tastic evening of music, comedy, and burlesque. The venue is an alternative arts and performance space set in a maze of disused railway arches under Waterloo station.
