If you’re busy stocking up on gourmet goodies and sampling restaurant dishes at Taste of London this weekend, there might not be time to cook. With that in mind, this week’s Friday Feast is in liquid form – three exotic Thai-inspired cocktails from Patara. Mix up these simple tipples, throw some satay or chilli-garlic prawns on the BBQ and let your feet recover from a day of foodie fun in Regent’s Park.
Thai Pimms – 3 slices fresh ginger, 6 sprigs of mint, 6 sprigs of holy basil, 3 slices orange, 3 slices cucumber, 1/4oz Pimms, lemonade, ice.
In a boston glass, muddle the orange, cucumber and ginger with the Pimms, then strain into a tall glass with ice. Garnish with mint, basil and more cucumber and orange.
Chao phraya – 1/4oz vodka, 1/2oz Tia Maria, 6 sprigs of holy basil, 6 sprigs of coriander, 1/4 Thai chilli, 1oz mango puree, lime juice.
Add all of the ingredients into a boston glass. Gently shake, then strain into a tumbler over ice. Garnish with holy basil and slices of chilli.
Siam Ruby – 1/4oz vodka, 2 slices fresh ginger, 2 oz fresh pomegranate seeds, pomegranate juice, ice.
In a boston glass, muddle the ginger with the vodka, then shake with 1oz of pomegranate seeds and ice. Strain into a short tumbler with ice, then top up with pomegranate juice and add the rest of the pomegranate seeds.
